Blueberry Season is Here!

Did you know blueberries are ranked number one in antioxidant health benefits in a comparison with more than 40 fruits and vegetables?!  Enjoy them fresh, frozen or included in any of the delicious recipes outlined below! Pick up everything you need at South Square Market, open daily from 6am - 10pm.

5 Ingredient Blueberry Dump Cake

Serving size: 8

Ingredients:

  • 1/2 cup butter (1 stick, or you can use margarine)

  • 1 cup flour (all purpose or whole wheat pastry flour)

  • 1 cup sugar

  • 1 cup milk (skim, almond milk or other dairy free milk in place of regular milk)

  • 1 pint blueberries

Directions:

  • Preheat the oven to 375, spray a skillet with cooking spray or grease it with butter and set aside.

  • In a bowl melt the butter (30 seconds in the microwave does the trick) then pour in the flour, sugar and milk and whisk to combine, until no big clumps remain. Pour into the prepared skillet.

  • Sprinkle the blueberries evenly around the top of the batter.

  • Bake for 40-45 minutes, or until edges start to turn slightly brown. Remove from the oven and let it cool for 10 minutes.

Blueberry Mojito Mocktail

Serving size: 2

Ingredients:

  • 1 cup blueberries (fresh or frozen)

  • 2 Tbls Honey

  • 1 Tbls Water

  • 1/4 cup Fresh Lime Juice about 3-4 limes

  • 4 leaves Fresh Mint

  • 2 cans Berry Sparkling Water I used La Croix

  • 1 Lime sliced into rounds

Directions:

  • In a small saucepan, add in the blueberries, honey, and water. Bring to a boil, then reduce to simmer for 5 minutes. Mash up the berries and then push the liquid through a sieve to get rid of the skins (optional) set aside to cool

  • Once cooled, place half of the blueberry mixture in the bottom of each glass, then pour the lime juice into both glasses. Place some lime slices and mint leaves in the glass

  • Add some ice and then pour the sparkling water in each glass. Stir and enjoy!

  • Add ice and top with sparkling water in each glass. Stir and enjoy.

Three Ways to Celebrate Strawberry Season

Strawberry Season is Here
In Pennsylvania, June not only marks the start of summer, it also marks prime strawberry season. There's never been a more perfect time to pick up your favorite soft and sweet berries from Rittenhouse Market.

Fresh Strawberries
Fresh strawberries are the perfect healthy snack. Keep some in your fridge to satisfy a sweet craving, or pop them in the freezer for a cool treat!


Chocolate Covered Strawberries
If you're in the mood for something elegant, there's no quicker way to impress family and friends than chocolate covered strawberries.

Ingredients:

  • 16oz package of strawberries

  • 1 cup chocolate chips

Instructions:

  1. Place chocolate chips in a microwave-safe bowl and microwave in 15-second increments, stirring in between increments until the chocolate is completely smooth

  2. Hold strawberry by the stem, place and swirl in the melted chocolate until the strawberry is covered

  3. Place strawberries on a plate and chill in the refrigerator until chocolate is solidified

Strawberry Shortcake
This easy recipe can turn your favorite fruit into your favorite dessert in just 30 minutes!

Serves 6

Ingredients:

  • 4 cups strawberries, sliced

  • 1/4 cup sugar

  • 2 1/3 cups Original Bisquick™ mix

  • 1/2 cup milk

  • 3 tablespoons sugar

  • 3 tablespoons butter, melted

  • 1/2 cup heavy whipping cream

Instructions:

  1. Heat oven to 425°F. In large bowl, mix strawberries and 1/4 cup sugar; set aside.

  2. In medium bowl, stir Bisquick™ mix, milk, 3 tablespoons sugar and the butter until soft dough forms. On ungreased cookie sheet, drop dough by 6 spoonfuls.

  3. Bake 10 to 12 minutes or until golden brown. Meanwhile, in small bowl, beat whipping cream with electric mixer on high speed until soft peaks form.

  4. Split warm shortcakes; fill and top with strawberries and whipped cream.
